If you’re referring to Christianity we believe we have our own pact with God through Christ. The Old Testament is supposed to be more of a history of God’s interaction with His chosen people, but we are not Jews we are Gentiles. It would be very wrong for us to try and follow the levitical laws. (However, I find good stuff in the old testament that I believe applies to me personally, such as an encouragement towards vegetarianism. I don’t think it has anything to do with my faith in God, simply that I seem to do better with a vegetarian diet.) Does that help at all?
Edit – Julia, I don’t know where you learned the Christians taught that you had to follow ALL of the laws or go to hell (not that I’m doubting you), but in my 20+ years as a Christian I’d never heard that before. I say this not to contradict you, just to let you know that not every Christian believes that.
